I've been invited to 4 parties with one request to bring dessert. I've been waiting to try out some new recipes so this is what I plan to bring!

I've purchased the smaller bite sized tomatoes and will cut my mozzarella balls in half cause no one looks cute shoving huge bites of food in their mouths, right? My friend Erin's Black Bean Dip is a delish home run at parties! I don't have the exact measurements but you can put in as much as you want of the following...
One can of black beans, rinsed and drained
Half a can of mexi-corn, drained
Limes (the juice keeps the Avocados from turning brown & tastes delish!)
Mix the black beans and corn together, stir in cilantro and jalapenos, add some black pepper and a little salt. Put it in the fridge to marinate for awhile. 20 minutes before your guest arrive, chop and de-seed your tomatoes, cut avocados into small chunks and squeeze fresh limes over the top. Add to bowl and lightly fold it all together! Serve with big Fritos or or tortilla chips! THESE are my all time fav!
They sell these mini potatoes at the store that make the most fun Mini Potato Skins that are perfect for a party! I use this Potato Skin Recipe but adapted it for the mini potatoes. You can TOTALLY melt the cheese on these on the grill. The smokey flavor will be delish!!!
